Baked Crab Pot (serves 4)


200g Irish crab meat
½ pint cream
50g grated strong cheddar or parmesan
Small bunch chopped chives
Dash Tabasco sauce


In a bowl mix the crab meat with the chopped chives, a little Tabasco.
Season with a little salt and pepper.
Divide the crab meat equally into four ramekins or small oven proof pots.
Divide the cream between the four ramekins. Sprinkle with cheddar.
Place the ramekins on an oven tray. Bake in a hot oven for 15 minutes.
Remove and serve immediately with crusty bread to soak up the sauce.
